It is important to achieve full ripeness from cool Adelaide Hills Bordeaux varieties to avoid any green vegetal characteristics. The Cabernet Sauvignon and Merlot of 2002 achieved this ripeness and provided the balance of elegance, richness and length on the palate. A classic claret that will continue to develop complexity and mature for many years.

1999 Cabernet Merlot

This is a powerful wine produced in the true Bordeaux style. It is a wine made for longevity which enables it to age gracefully, picking up complexity with the years.

In its youth it is showing typical Cabernet Sauvignon characters of blackcurrant (cassis), prunes and sweet oak that linger on the palate. The firm tannins add to the outstanding structure of the wine and I look forward to enjoying this wine in 3-10 years.
